Meatless Monday: Plant Balls
These days preparing and cooking a home-made meal after working all day, keeping up with social media, and trying to be the best friend, mother, uncle, teacher, etc. might sound like just more work. Driving through a drive thru or popping something in the microwave might be your usual tradition. However, studies are showing that processed foods are filled with chemicals your body cannot recognize making your body work harder and depleting you of your energy and your ability to be your greatest version!
(side note, throw away your microwave)
Evolution is here, allow me to introduce to you the PLANT ball! Eco friendly and easy on the body. Made with ingredients you CAN PRONOUNCE! My daughter and I have a saying “If you can’t read it, don’t eat it!”
RECIPE
Plant Balls aka plant based "meat" balls (12-16)
Ingredients:
1 cup Chick peas (drained and rinsed)
1 Tbsp grounded flax
2 Tbsp water
1/4 cup fresh parsley
4 cloves of chopped garlic
1/2 cup chopped onion
1/3 cup of vegan Parmesan
1/2 cup of Italian bread crumbs
3 Tbsp Italian seasonings
Grape seed oil to sautée onions and garlic
Sea salt
Black pepper
For coating plant balls
1/4 cup of vegan Parmesan
1/4 cup Italian bread crumbs
Serve with pasta and your favorite tomato sauce or make "meat" ball subs!
Directions:
Step one: make plant egg and set aside
1 tbsp grounded flax seeds mix with 2 tbsp water
Step two: chop onion and garlic and sautee till lightly brown, about 5 minutes
Step three: add sautéed onions and garlic to food processor along with,
- Chickpeas
- Parsley
- Plant egg
- Italian breadcrumbs
- Vegan Parmesan
- Sea Salt
- Pepper
Blend on high, using a spoon to get mixture all blended up evenly ( DO NOT PUT SPOON WHILE FOOD PROCESSOR IS ON!)
Step four: preheat oven to 375 degrees Fahrenheit
Step five: use a tbsp measurer and scoop out mixture and roll plant balls with hands.
Step six: roll plant balls in coating mixture
Step seven: coat an frying pan with grape seed oil and fry balls till golden brown, shifting the pan to roll the balls in the pan to get heated evenly, about 5 minutes.
Step eight: line on baking pan and bake in oven for about 20-30 minutes. Till golden brown.
Step nine: Remove from oven safely and pour over your favorite tomato sauce and enjoy!
